Garnish with Parmesan cheese and serve over rice, if you wish.
Cook the beef and pepperoni in a pot. Once completely cooked, strain and rinse (this gets rid of the pepperoni grease). Add the peppers and mushrooms to the pot and saute for about 3-4 minutes. Add the chicken stock, the rinsed black beans, the jar of Mama's Marinara and the beef & pepperoni. Let this all heat thoroughly. While this is cooking and the flavors are coming together, cook some rice separately (according to package directions). Place a spoonful of rice in a bowl and serve as much soup as you wish over the top. It's delicious and good for you!
