Note: This can be made with any of the Tomato sauces, Marinara, Spicy Marinara, Fra Diavolo or the Fra Santi, you decide which one you are in the mood for tonight! I like to make a little extra for lunch or sandwiches the next day.
Serves 6:
2 Jars Fra Santi or (your favorite)
4 Chicken Breasts, cut in half and beaten with the flat side of a meat tenderizer
3 cups Flavored Bread Crumbs
1 cup of Parmesan Cheese (Grated)
1 cup Buttermilk or Milk if you don't have it
1 1/2 cups Mozzarella Cheese, grated
Preheat oven to 375 degrees. Mix together the Bread Crumbs and 3/4 cup of the Parmesan Cheese, set aside. Cut 4 Chicken Breasts in half and then beat them with a meat tenderizer until they are about 1/2" thick. Soak chicken in in Buttermilk in a separate bowl, set aside. Remove a piece of chicken and place it into the breading mixture. Make sure to press down on the chicken to ensure it is fully coated. Set aside onto a baking sheet. Continue until all chicken is coated. Bake Chicken until it is fully cooked (about 25 minutes, until the inside temperature reaches 165). Remove Chicken, top with about 1/2 cup of Mama's Fra Santi Sauce, sprinkle Mozzarella Cheese on top and place back into the oven for approximately 10 minutes so the cheese can melt. If you like the cheese a little brown, put the broiler on for about 3 minutes. Serve hot over your favorite pasta or Roasted Vegetables. Sprinkle with remaining Parmesan Cheese & some additional sauce! Enjoy!
